I think that depends on the dog and whether they use their eyes or just their nose. I don't see a difference in my dog whether I can see the track or not.
Get down to a dog's level and they do not see the track to the extent that we can.
I used to track in the snow. My first dog I did a lot of straight tracks with her before adding in corners. When I first added corners she would still want to go straight despite the track obviously turning (we were in snow). Then later on with other dogs I would track through the areas in the field where I threw the ball. There were a ton of footprints yet the dogs still followed the track I laid.
