Yesterday was my baby boys first birthday! He was really sick a few months ago and it was up in the air if he would make it or not, so I made his day really special.

First he was gifted with Pedro the four foot cactus that he absolutely adores. He takes it everywhere with him. Then we went for a 3+ mile hike in a local park, afterwards we had lunch I had a French dip and he had a chicken breast. After that we walked to a dog boutique where he had ice cream.

Once we returned home we spent hours outside playing with his “big brother and sister”. As it became later I grilled burgers for dinner and I had baked a cake the previous day. I’d be happy to share the recipe if anyone is interested, they all absolutely loved it!

At the end of the day everyone was happy and sleepy :)

Thank you all! I am very proud of him. He is my first GSD and I absolutely adore him, and him me.

I originally made a double batch of this recipe because I was ambitious to make a double tiered cake, but alas the other cake broke in half when I tried to flip it over. I like to bake but I would like to mention if you are not familiar or even intimidated to bake this is an easy recipe to follow and the patrons don’t have much in the way of complaints :D

-2 cups flour
-2 tsp baking soda
-1/2 cup melted coconut oil
-2 eggs
-3/4 cup honey
-1/2 cup mashed sweet potato (or you can use pumpkin purée)
-1/2 cup applesauce
-1/2 cup peanut butter
-2 tsp vanilla extract
-1 cup Greek yogurt
-1/2 cup peanut butter

Instructions:
-Preheat oven to 350 degrees, lightly grease (although I forgot to do this and neither cake stuck) 9” springform pan.
-large bowl combine flour and baking soda.
-Melt coconut oil over lo-med in a small saucepan.
-In another large bowl, whisk eggs, honey, sweet potato, applesauce, peanut butter and vanilla using an electric mixer. If you don’t have one mine was like $15 and is a total lifesaver!
-Then stir in melted coconut oil til fully combined.
-Fold wet ingredients into dry, stir by hand to combine.
-Pour the batter into the pan and spread it evenly as possible. Maybe bang it on the counter a few times to help it settle.
-Bake @350 for 20-30 minutes.
-Allow the cake to sit for 10 minutes before removing from pan. Wait til it is COMPLETELY cool before icing. I made mine a day in advance so I wouldn’t feel I was in a rush!

For the icing, it’s as simple as mixing together 1 cup Greek yogurt with 1/2 cup peanut butter. I was surprised at what a nice, creamy texture it had. Coat your cake how you like, and I personally topped mine with fresh shredded carrot, and cheddar cheese! Bone appetit!
