Short version: Can dogs react to our frightened body language in a matter of seconds? Or is it more likely that they act on premonitions of their own?

Long version: Today while I was picking up Heidi's poop, a mumbling lady popped out of seemingly nowhere from behind and scared the pants off me. It happened so fast that I don't even know if Heidi barked first or I turned around and got the startle first. Then we got to our destination, the dog beach. While Heidi was greeting another dog through the gate, a lurker man who was pacing back and forth along the outside of the beach fence and his off-leash chow ran up scaring me again, and Heidi again barked and then raised hackles. Were these more likely behaviors from her feeling threatened or from her reacting to my fear? I guess it doesn't make that much of a difference, just curious because none of my past non-GSD dogs ever seemed to react to my body language at all if it was fear-related.
