Seats up (whichever row it was for this option) & seatbelted dogs. You can improvise a "deck" to fill in the "human leg/foot" space with two plastic bins (which can also hold stuff for the move) (maybe more than two?) and a board across the top of these. This allows the dogs to stretch out a bit.

Safety is more important than comfort. but both can work out with this. You do not want the dogs moving the heck around.

I brought two dogs 2000 miles in maybe 3 days belted in the back seat of a dual cab (or whatever its called) of a truck. I did have the seats folded so they had a good amount of space and I had two dog beds that worked great on the floor in back. Both dogs were incredible champs with this --- When I needed a nap, they got moved to the front seats & I slept in their travel space. I know that 2 kids and a spouse add some complications to this but you have a more spacious rig and a second driver....
