Genetics or trained

I want to know how you can tell if your dog does a certain thing\reacts because of its stable genetics or because you trained it ?For example my gsd isn't afraid of motorized vehicles, the vaccuum or lawn mowers. I didn't teach him this. But if I get nervous about someone approaching me, he barks. I didn't teach this either. But I correct it. I don't know if his tempermant is stable and that's why he's not scared of certain things. Is being able to sense that I'm feeling nervous about someone genetic ? I have another dog (non gsd) and he could care less of I'm nervous about someone approaching, he greets them with kisses. If I didn't socialize my gsd from a young age but he had stable genes would he be friendly still ? Or is being friendly trained ?
