1 year Apollo

My boy will be 1 tomorrow and he's only 76lbs. I want him to put more weight on, he's on a raw and raw covered kibble diet at the moment. He gets plenty of exercise so he'll never get fat, so I'm not worry about that. Just curious how much food I should actually be given him, between the raw and the raw cover kibble.

He appears to be a good weight in those pictures.

Normal weights for a GSD:

30–40 kilograms (66–88 lb) for males
22–32 kilograms (49–71 lb) for females

So you dog's weight is right where it's supposed to be.

My dog is 1 year 10 months and weighs 78 pounds. The vet told me he is too skinny and needs to put weight.

Absolutely gorgeous! Dog weight can be a bit funny sometimes. It depends on a lot of variables. A lot of folks think bigger is better and that dogs like these should all be taller and over 100lbs or something is wrong with it. In reality, they should be pretty trim and toned, 24-26 inches at the withers on average for males and males should rarely reach 100lbs ideally. You get some outliers that are smaller or slightly larger but he looks absolutely healthy.

Correct bad behavior, don't redirect. Redirecting is rewarding, not resolving.
