What are the commands for "attack" and "quiet"? Thanks.

Attack--angriff

Quiet--still

those are the literal translations however there are some common words used and in place for that. For an attack people usually say "FASS!"

As for "be quiet" it would be "Sei ruhig" or "Sei still"
