Default GSD turned into attack mode, why??

My wife was gonna take our 10 month old GSD walking with her and her cousin and as soon as Kenzie (the dog) seen my wife's cousin she turned into attack/protect mode. Why?? I showed up and scolded her and asked her cousin to take her winter hat off and then Kenzie was a little better. My wife ended up taking her on the walk still and she was fine after that, even with her cousin wearing the hat. Why would she do that??

She's 10 months old. She's trying out her big scary dog act on the cousins hat. I had one dog that I had to tell people TAKE OFF YOUR SUNGLASSES Dog couldn't stand not being able to see someone's eyes.

Our almost 5 month old has some similar tendencies, she does much better meeting a 'dog person'. We met 2 in the last week, maybe 3. With 2 she had a little initial barking, then was just fine after some sniffing.

Today she met a guy and his 9 yr old Golden Retriever on the walking path. She had a few barks in her to the end but settled down a bunch. I made sure there was no fight or fur flying.

My 4 month old hasn't started in on this yet, but for future reference, do you correct this when it happens? Or let the pup work through it like fear reactions?
