I had a female GSD, until she passed this year. She was extremely friendly to the point of almost knocking people over with joy over seing them, even if she never met them before. That was too much as she was 115lbs of love that could literally sweep people off their feet.
I have had a male GSD for 11yrs and he is the most balanced GSD I have owned. He is not nervous around people, not agressive, very gentle but protects the house and yard with barking etc, and he is aloof with strangers at first and then will let them approach and pet him. He has never growled, bitten, or bared his teeth to anyone, but people that don't know him steer clear of him in the yard. He is imposing looking and will protect us. He generally ignores people on walks as if they aren't there. Very sweet temperment and the easiest pup ever, housetrained in less than a week, and never needed a trainer. This one, is getting better with people but needs more socialization as to not react badly around people nor to knock them over with love. I don't want her to be a social butterfly but to be more like my Male GSD. I want to feel protected in my neighborhood ( had some seedy characters in it and robberies) I don't want a dog breed that will lick a robber as he climbs through the window.
