trying to get a read on my dog - advice appreciatted

put this vid up before but never really had a question to go with it. i want to understand my dog like everyone does of course and would like some opinions on where you think his head may be at in the work from a short clip. i would be happy to make clips that might better get at the answers i want if someone told what scenario to set up.

unfortunately the first 3 minutes 23 seconds of this clip is irrelevant if you could please skip it. i should have just posted the actual training bit.

this is the only clip i have with formal training on a real helper and it only goes for a minute starting at 3.25.

i had to beg the decoy to let me record, he only let me cos i wanted to see what a bite along way from the handler looked like. i can't tell if the dog is overblown in prey or serious, he wants to punish the sleeve like a shark in a feeding frenzy which suggest prey dog - he growls on the sleeve which suggest weaker nerves, the catch is that disputes those conclusions is he will go for the man with the same drive as he would go for the sleeve, the decoy knew this 30 seconds of meeting the dog and he is very experienced.

the dog just goes up and up and up in drive. originally he bit frontally which suggested bad nerves but the decoy fixed this in three sessions and it was more that i used inexperienced people that gave impossible presentations for a dog to actually get its mouth on.

any advice on this dog nature or what scenario would be better is greatly apprecuatted.
