misslesleedavis1 You know what else is delish!!!
A gluten free slice of toast with half an avacado mashed into it and a fried egg on top of the avacado..then organic fresh thick slices of tomatoes on top of the egg. Throw some salt n pepper on that and its insanely good if you like those foods.

Thanks, i do eat Gluten free bread and tortillas. My diet is primarily Salads, vegetables and Salmon however i cant stop drinking coffee.

misslesleedavis1 3 Tbsp olive oil
2 or 3 cloves of garlic chopped
1 cup of fresh basil chopped
7-8 aparagus stalks not cut up
2 cups chopped mushroom
2 red peppers sliced
1/2 onion diced
1tbsp of pesto sauce
(Add any veggies you love we add celery)
2-3 boneless skinless chkn breast
2 package of gluten free noodles.

Combine oil, basil and garlic in frying pan simmer for about 5 minutes then add all other veggies, stir frequently add pesto
Cook chicken separately in stove.
by the time your chicken is done you veggies will be cooked, start boiling noodles. Cut up your chicken and add it into your veggies, add about half a cup of boiling water to your veggies mix and stir until everything is mixed nicely. When your noodles are done drain and add the veggies n chicken. this will make enough for 4 with leftovers. You can add as much salt pepper or hotsauce as you like.
Get creative with it also if your pesto lovers like us you can go ahead and add as much as you like, my Experience is you can never screw up Pasta.

lorihd@comcast.net I have never been on a gluten free diet, it seems very similar to a low carb diet, which I have done. No bread, rice, pasta, etc.... just whole foods and no sugar. Its amazing how quickly the weight comes off.

BroncoK Misslessleedavis I would like your recipe'!

We have been gluten free for almost a year! My son is gluten sensitive to the point that he wouldn't have a solid poo. Ever! (He is 3)Now he breaks out in hives and get a skin rash whenever we accidentally bring it in our diets, not to mention the stomach aches.

It is quite a bit of work trying to figure out what you can eat and with kids we all went through a detox of sorts. But now that it is gone we eat a LOT more vegetables and fruits then we ever did.

Just like everyone else here who has contributed, really you get to a point where you are just sick and tired of feeling sick and tired! So it really is worth the change! My children have excelled in their schooling since getting rid of the gluten. Apparently they had a bit of brain fog as well that I wasn't in tune to!

My only other advice is you will have to be really careful with ingredients. It is a trial and error. Skittles claims they are a gluten free candy on their bag so I bought some for my kids for haloween, then my son kept getting sick and I couldn't put my finger on it! Come to find out Skittles has Dextrin in it, which is a "Corn or Wheat filler"....so...now any candy with Dextrin in it, we can't have. Meatballs...etc. It's an adjustment. But SO worth feeling younger!

misslesleedavis1 Andrew came back from North Carolina saying that gluten free options were the norm there. I guess its more catchy there then it is here.

RocketDog Yes, if you want you can pm me. I've been eating a very clean diet for 6 years, (I have Rheumatoid Arthritis) and been gluten-free (mostly) for over a year. Big difference for me, but I have other thoughts as well. Elana's Pantry (online) is a great resource for gluten-free recipes. I don't find it to be 'pricey' because I buy actual food, not gluten-free box mixes, etc.

I mean, other than our ridiculous food system is built on the premise that junk food should be cheaper than good quality fruit and vegetables.

Thanks for writing about your experience. I'm finding the pleasure of the baked goods are not worth the pain, the yuckiness I feel later on. Thank goodness I can still eat dark chocolate which is recommended in my How to Live to 102 book. I'm just glad my headaches are minimal and am looking forward to a smaller gut soon.
