This is just me and I may get some flack for saying this, but at 11 months old there is no way I would tolerate biting my hands for no reason. I actually put a dead stop to biting like that by 6 months because I don't want my dogs getting into the habit of thinking that behavior is ok. As puppies, I redirect, but once the adult teeth come in, the game is over. Its disrespectful behavior and would result in a correction. If a firm NO doesn't work, he would most likely get a sharp collar correction. I'd leave a leash on him in the house while he's out and about so that I could correct when necessary.
Other than that, you might want to look into finidng a reputable behaviorist to take on that "kill mode" issue. Unless thats the kind of behavior that you want with strangers in the house.
Hopefully others will chime in. This is again, just my personal opinion. I don't let my dogs teeth on me just because they feel like it.

Almost 11 months and still biting
Thanks in advance to anyone taking the time to reply. I have searched the forum and found very similar posts. Everyones situation is at least a little different so I thought I would post my own thread anyway.
My boy Kaiser, will be 11 months on the 22nd Jan. Wow that went quick.
He has completed basic obedience training (can sit, lay down, wait for food, shake etc.) Still working on his recall!
We exercise him regularly. We are lucky enough to have a big backyard, more than enough room to play fetch. I take him for 2 x walks a ay. He has plenty of dog toys laying around and plenty of suitable things to chew on.
The main issue we are still having is we cant seem to get him to stop biting us. Mainly on the hands. He does this without it being instigated by us in any way. We are constantly re-directing him to a toy or something else suitable to chew on. We also have got into the habit of separating him from us until he calms down (like a timeout). Quite often he will also begin snarling and snapping his teeth at us when he gets a bit to excited.
This kind of behavior is only occurring at home. When we are out of the house he is very well behaved and friendly with strangers. He is very territorial at home, so I guess this may have something to do with how he behaves there. For example if i invite someone he doesn't know into the home he will be in kill mode for a while until he settles down.
Any advice/help greatly appreciated.
