I'm not sure if there really is any material that is chew proof, but you might want to try something like this, made of a leather-like thick material:
You want to look at biothane, A.S.A.T. or "all-weather" harnesses - most SchH/Police dog equipment websites will carry something like that. Added bonus is that many will have a handy handle that is exactly what you need.
Here are a couple:
All Weather Dog Harness with Quick Release, Schutzhund, Police K9, Tracking dog , Protection
3-Point Agitation Harness-Elite K-9
I have no personal experience with these, just linking them here as examples of what might work for you.

When we hike I like one on in case I have to grab her quickly (which rarely happens but it has occurred) and depending on the terrain I rather clip the lead to the harness vs. her collar. Got loads of leash laws in the areas I end up hiking.
She is good with the collar but for hiking interesting terrain where some scrambling maybe involved, I prefer having the harness.

Harnass suggestion - Ava chewed thru her 7th harnass
I just bought the 7th nylon harnass last week and now it's chewed through. Took my eyes off her for 10 minutes after she finished breakfast and while I'm eating mine did I notice she was happily chewing on her harnass.
Yes, it may have been a bit loose because she is blowing coat (made her look like she lost 3-4 lbs) but she can contort herself in god knows what fashion. Harnass was $15.99.
Been eyeing the material that the military m1-k9 is made out of for a basic harnass. Any suggestions?
I didn't go this route earlier because of vanity. I wanted purple to try to make her look friendly with girly colors to off-set the intimidation factor and maybe people will think she is a girl. Now i'm over it. I just have to settle with a hot pink or purple bandanna when we hike or walk about town.
