|RICO||Ever since I changed his diet his stool has been nice and solid, which I guess is a plus since it makes it a thousand times easier to clean up, but he hasn't seen the vet since his last B12 injection which was several weeks ago, but he has been fine after all that, and showing no signs of distress, or symptoms that he previously showed. And even now, he is acting 100% normal... But he was in his crate this morning, and he will be in there tonight, that'll be the routine for the next couple weeks until I regain some trust and see if he learned his lesson.|

Hmmm, he's gonna make you work hard on this mystery, lol. The last two weeks has his stool been any looser or different? Has he had a vet check up fairly recently? Could be something G.I. related since you said he's had some issues in the past.
No new neighbors, different work shift, anything? Sometimes the tiniest things will set them off...
Not certain closing off access would help anyway if it is behavioral, because he might just choose a different area to inappropriately eliminate in. Couldn't hurt to try like Madlab said-whenever you are able. Never had this particular problem. Hopefully, someone who has experienced this exact problem will chime in. You may have to start back at the beginning with crating like you said.

If you can rule out something medical and have not changed anything in his diet or walking schedule, I am wondering if this sudden behavior could be due to the remodeling you had done. Were there strange people around, such as workers in the house during the remodel? I have had some pets who are sensitive enough to tiny changes in the house or the family schedule to start "acting out" because they don't know any other way to show they are upset.
Just a thought.

2yr old starting bad habit...
My 2yr old GSD has been going #2 in my basement recently... Once was an accident, twice I started to get worried, not he's done it 4 or 5 times and I am at my wits end... I love my dog more than anything, but if this behavior doesn't get corrected I don't know what I'm going to do, I just can't deal. This has happened even when I'm sitting on the couch on the main level. My dog has been potty trained since he was 10 weeks old, now all of the sudden, he just doesn't care. The instance when I was sitting on the couch, he didn't even hint that he needed to go out, he just went downstairs and went... He also does it in the middle of the night... We just did some remodeling so I have no way to block it off at the moment, hopefully in the next week I will have a rail so I can put a baby gate at the top of the stairs to keep him from going down there. But my real question is, why would he all of the sudden start doing this? This dog has a GREAT life, I know he doesn't realize how good he has it... At this point I'm in the mindset that if he's going to act like a puppy I'm going to treat him like one, thus, he is starting to get crated when I leave and at night (usually he has full roam of the house). Like I said, hopefully I'll be able to gate that area off soon... I just want to know why he'd be doing this...please help, because I'm losing trust in my boy very quickly...
