Steps to do this:
Don't mind how I've spaced out the URL because if I don't, the software will automatically embed the video.
1. All Youtube video links have this:
w w w. y o u t u be.com/watch?v=TruIq5IxuiU.... by that, I mean, they all have the "watch?v=" in the URL.
2. Take the portion of the URL AFTER "watch?v="....so in this case, it's "TruIq5IxuiU" that we're interested in. Copy that portion of the URL.
3. Then in the post itself, you're going to use a closed and open youtube tag that we've set up. I can't post the tags here without the software doing something with it but the open tag uses these brackets: [ ] and the close tag uses these brackets [/].
Again, I'm putting spaces here but you should use the tags without the spaces for it to embed properly.
The final embed code would look like this for the above video I posted:
[y o u t u b e]TruIq5IxuiU[ / y o u t u b e]

I think part of the problem was I was using preview post to test if the video would embed. That was giving inconsistent previews, sometimes the link 'looked' like it would embed other times not.
Still, would it be possible to have the little film strip icon like we have for images to make the process of embedding youtubes easier?
There are times when it will only show the link and not embed.
Like in the new subforum for videos of members training their dogs you'll see only the links show, not the embedded video.

See I can get this video to embed just cutting and pasting the link in this thread but if you take the same link and start a new thread it won't embed:

Yup, it's a battle that I have not won yet! LOL!
Having said that, I've not had this problem on other boards.
I think there's a couple of fixes that can be put in place that makes it a lot easier to embed youtube videos on vbulletin.

The simple link always works for me in every thread, so I can't even help with that....
Like this http:/www.youtube.com/ watch?v=dtr7aG-MJCY without the space before watch? will immediately open if I take that space out.
This IS an issue and sometimes, depending on how I get to a youtube video I have to battle to figure out how to get the good link. Generally, if I put the title of the video into the youtube search block, when the video shows up there I get the right link...

I saw that and did use the links that matched the example you had posted.
In some threads the link would embed and some it would not (same link).
The common denominator seemed to be if the thread had already had an embedded video in it, then the "&feature embed player" seemed to work though the video title was horky.
Then I took the exact same link and tested it in a new thread, no go, just the link, no embedding.
So there's an inconsistent response even when using the same link.
