What rescue are you working with? My biggest advice would be to look more at the individual dog than any other factor (age, look, etc). Get a feel for the dog, take them on a walk, watch how they interact with other people (if they even want to). Our biggest mistake with our rescue was that we met at a dog-park, didn't take her for a walk, didn't see her interact with many humans, and didn't have her alone with our dogs to see how they interacted. We basically showed up, talked to the owner for a bit, and saw how pretty she was. Then her owner left and we took her home.
Not the best way to adopt our first GSD and we've worked through most of the kinks from it but I really wish we'd gotten a more complete picture of Sasha before we took her home. There are many more experienced people on here though so hopefully they can have some more specifics for you
