Itching, is it allergies?

Aloha, Nimai has been through a lot for a one year old male GS. Now he is mostly recovered from his near fatal car encounter, although he has a crippled left front leg/paw. He is now itching a lot, and I have been inspecting for fleas/ticks.

He has a flea/tick collar and sleeps in different areas outside (in Hawaii=warm) and has no blanket or dog bed.

BUT I have been trying different Costco kibbles to see which one he likes because up to now he has been skinny........SOOOOO........ since I read about GSD and allergies, can the different kibbles (mostly chicken based crap) be causing the itching or?
