Default a not mouthy GSD?

some of you might have read my other posts. Ginger has been with us a week and is going great.
Odd behavioral thing I've noticed (other than her crate issues) is that she doesn't seem to know how to play. She won't take a toy from me. she won't bite anything (other than food). She doesn't seem to have those bitey, mouthy traits have heard alot about.
While this is great, and I know my shoes won't need to be replaced....it makes me sad that she isn't playing.
Has anyone else experienced this?

She is a mature dog. The bitey, mouthy ones are puppies.

Maybe get a tug and drag it along the ground to see if she would like a game of tug.

Go to You Tube and search Michael Ellis to see how to play tug with your dog.
