I love rice bran oil -- heart healthy, (oryzanol) maintains its antioxidant virtues even at high temperatures. Can be used at high temperatures for stir fry , tempura . Another one I use is virgin sesame oil a pale , slightly nutty taste oil with some interesting health benefits , not the dark brown roasted sesame oil which is strong in taste and good for a top dressing flavour in Asian dishes.
High oleic sunflower seed , high oleic safflower seed peanut oil , and grape seed oil are good at high temperatures (smoke point is high) .
You don't want to put food to too high a temperature and bring out acrylamides in starchy foods such as potatoes , (french fries) .
I have all these oils , including several types of coconut oil , red palm oil, plus others -- feeling like an oil baroness .
