Are there any vegetarians onboard here? I have read the book Eat To Live by Joel Fuhrman and it makes a lot of sense. Unfortunately, I think it's going to be really hard to make the whole switch cold turkey.
I would like to find a book that will help me learn about what I am getting myself into. That sounds vague, but a book that will tell me what each fruit and vegetable offers in ways of vitamins and minerals so I am not lacking in anything. Maybe a website too? Denise

The most annoying comment I got from people is that vegans/vegetarians don't get enough protein. Well, that's not true. A simple search came up with this site.

Joel Fuhrman was on PBS last night - might be repeated as "holiday" scheduling . Always interesting to watch .
There is so much information about vegetarian / vegan . A huge world encompassing many cultures and ethnicitys. I snagged my old dog eared copies of Diet for a Small Planet and Recipies for a Small Planet from my daughter....We also have a book called Lean LUcious and Meatless we like.......we started back to vegetarian when my mother (who is a stroke patient and lives with us (Afib, hole in heart)....developed gout and we had to cut the meat.
The main trap you can get into with a vegetarian diet is eating too much dairy. My biggest discovery of last year was Kale. I had an inherant revulsion to it from years of dark greens being cooked with fat and until completely limp. I always rejected it outright. Kale is a nutritional powerhouse and lightly sauteed or the young greens in salads is incredible. Yes, with mom on Coumadin we do meter all that - the main consideration for someone on anticoagulants is consistency.

I've been vegetarian for 20 yrs (lacto/ovo), though I have to admit I'm an accidental vegetarian as I wasn't seeking to be one. I was always getting grossed out eating meat...often gagging...thinking about eating a dead animal. For years I would stop after such incidents and each time after several months go back. Eventually I noticed it had been a year since I had eaten meat...and that was 20 yrs ago.
I'm afraid I don't have any readings to offer you but I can tell you it's much easier these days then it was 20 yrs ago. There are so many options now. Having said that I am not vegan which is difficult. In either case be sure you take vit b12. It is in meat and most vegetarians are low on it...go low enough long enough and you will loose irreversible muscle function (to the point of not being able to walk). |

my son is a vegan -- there are sources for b 12 - nutritional yeast is one of them Vitamin B12 in the Vegan Diet -- The Vegetarian Resource Group Vegans and the B12 Deficiency Myth
last nights meal --- left over cooked SPROUTED brown rice with chia seeds added -- a side of caramalized onion with chopped chestnuts and chopped "unsugared" cranberry harder to find but I use them in a supplement -- or just soak the conventional sugared ones for a few minutes -- large salad that was 1/3 romaine for crispness , 2/3 spring mix -- I bosc pear cut into small pieces , a handful of California walnuts (not chinese) dressed with lemon juice and rice bran oil , a pinch of grey sea salt, light fresh black pepper , a drizzle of honey --NOT billy bee which is largely from China and has anti biotics (we had a fall fair with the apiarist society displaying their local organ honeys -- and information urging people to reject honey adulterated with sugars (sugar fed bees) and antibiotics . Last but not least crumbled blue cheese. as I said you won't be loosing anything , you will be gaining . Carmen |

There are a few reasons for my changing my eating habits. One, I have a friend who is dealing with colon cancer and is fighting for his life. His only hope of survival is maintaining an alkaline diet which means he should be going vegetarian as well. I have taken an anatomy class which has taught me how my body works. Between the class and reading Dr. Fuhrman's Eat To Live Book, I see that I need to make some changes in my life. The words "eat better and exercise more" didn't mean much until I understood why. Now I do. My mother always taught me to eat as much natural foods as possible by growing your own fruits and vegetables without pesticides and not preparing food out of cans or boxes. For a woman with an 8th grade education, she was right.
I will look into all the suggestions here. Right now it's overwhelming. I had plain oatmeal with frozen strawberries for breakfast as a start. Blah! lol.

2010 - January , I lost my brother in law to colon cancer a girl friend of some 25 years to uterine cancer, another to cervical cancer . What a horrible start to the year . When my brother in law found out - he being a widower with not the best attention to diet - so for years and years take out and convenience foods - my husband was his care taker . He was told by experts in one of the worlds best oncology clinics (Princess Margaret - affiliated with the U of Toronto and known for research) later at Mt Sinai specializing in gastrointestinal cancers. He was told to get his affairs in order , to expect 6 months at the best. He , with radical changes to his diet and supplements beat the odds and lived another 3 years with quality. He was able to travel to his beloved Hershey PA and continue activity in antique car restoration . His cars were used in a lot of movies. For 3 years I would prepare frozen dinners that were delivered to his house . So about 5 - 6 years ago my reading choices were very concentrated on cancer - food . I have an excellent library which I bring along with me to market and lend out to anyone who is interested on needs them. I say with heavy heart that the books are out far too often . here is one I would HIGHLY recommend one of the most important ones written by a Dr who fought his own brain cancer there are so many good books -- with diet and recipes - not a one is necessarily exclusive to cancer - these are good tasting , healthful , guides to prevention. Please make sure they are getting digestive enzymes and probiotics -- which reduce toxic load and pull out full nutritive values out of food -- Please look into broccoli sprouts -which have the highest sulforaphanes -- the sprouts !! Now even scientists say broccoli can cure cancer, not just prevent it Cancer Fighting Foods and Spices look in to mushrooms - your vegan/vegetarian "burg" would be a large portobello mushroom , upside down gills up , drizzle with garlic oil, sea salt, fresh pepper , grated garlic -- use worchestershire sauce (makes it taste exactly like a grilled steak) grill till well done . Put some onion that you have tossed in the oil in the oven at the same time to carmamelize . Put this between two whole grain or sprouted (like ezekiel bread) buns , maybe some swiss cheese or REAL cheddar (no cheez or "american" ) some grainy mustard . Now who would not like that . Other mushrooms you can get - all have a good source of quercitin -- are available in powder / tablet form and they are maitake, shiitake, reishi, cordyceps etc. Look in to curcumin - tumeric , tumeric concentrates . Very important ellagitannins -- meeker red raspberry seeds for ellagitannins. (the finer the grind the better) Deeply pigmented colour full foods -- black raspberries -- BLACK rice (forbidden rice - not wild rice) amazing ! hard to find - I can send you some if you can't find it (goes for everyone) raspberries , acai , Look for high ORAC value , so , that would be chia seeds -preferably sprouted and ground , goji berries , camu camu . Look for matcha green tea powder -- Look for omega 3 oil - clean fish oil . Vitamin D3 beta carotene -- look in to african grown Red Palm Oil. Look in to complex food sourced vitamin E complete with all 4 tocopherols and tocotrienols . -- gamma tocotrienol 3 , in abundance in red palm oil . all these products I know because I use them every day in the making of my supplements. I enjoy them in my own diet .
