Just like switching to any type of new food, it will take a few days for wolf's digestive system to 'learn' how to digest the raw. The gas issue should abate soon. If not then he might not be able to deal with one or more sources of protein he is getting - some dogs just can't handle turkey, or pork, for example.

Best to start off a new dog on raw, is to start them with only ONE source of protein for the first week or two. So in your meal above, there was chicken and beef. Cut out the beef, and stick with only chicken. Easy on the organ meats at first. So a few meals of only MM and RMB, then as his system gets used to that, start adding chicken livers in small amounts (make sure it is chicken livers, remember we are sticking to ONE source of protein for now.)

After a week or two of wolf doing well - no killer gas, no runny poops, no itchies - you can introduce a second source of protein, like beef. Again, start very slow. A bit or MM and RMB along with the chicken. If no adverse reaction, try adding a bit of beef organ meats, one type at a time. Then after a couple of weeks of wolf doing well on chicken and beef, you can try a third source of protein, and so on.
