Hows this for a newbie menu?

I really want to feed my dogs raw but its just a mine field out there.
I have 5 dogs, 1 gsd, 1 labx, 1 collie, 2 mini poodles.
I was thinking of starting with a tripe and meat mince, chicken wings for the poodles and carcases for the other, rib bones, heart and lungs.
above can be delievered or a butcher close can do chicken carcasses/wings, rib and spine bones and they make their own pet mince which includes lung,liver,heart and fat

Which would be better?
am i on the right track?
