My GSD is now 3yrs and he has no interest in rawhide bones, can't eat bones from the butchers be they cooked or raw as they make him ill. He has a ham bone that I buy in the supermarket but he only gets it once every 2 mtgs as it also make him ill. He likes the ham shanks I get off the deli but it makes him very thirsty. So what are good treats for his teeth that he has to chew as he needs to take his time

He's smart not to want rawhide! Bad for his digestion. Ham or anything smoked is also not good.
If you are giving the marrow bones from the butcher, the marrow is very rich and does cause some diahrrea...but getting a knucklebone with cartilage is usually much easier on the gut, aids in teeth cleansing and the cartilage is healthy nutrition. I would not give a whole turkey neck all at once, there is alot of bone in one, I'd cut it in 1/2.
