I agree what you do with your personal dog is different than a strange dog. But I try to always acclimatize my dogs to as many scenarios as possible as the real world is very rarely predictable. Most people do immediately go for the head, and on GSD's I find most go for the ears.
I don't care if my dogs dislike things, both of my dogs dislike being touched by strangers but I expect them to tolerate it to a point. Otherwise they would be untrustworthy in public and I don't want that.
