Sounds like you have yourselves set up for success. Just one question though...are you 100% certain he pees before you crate him? I suggest watching him like a hawk and making sure he pees, not just acting like he is peeing for a treat. Sometimes older dogs will mark things to and forget to actually go pee and empty their bladder.
And I am a bit confused on one point you made. You say he does not get any water in the morning. Im sure you don't mean that he drinks nothing between the night before and the next evening. Some where along the way he drinks before you put him in his crate and he probably does not relieve himself of that water before crating him again.
Look into the timing one evening. When you notice him drink, let him drink his fill then take up the water and watch him. Time how long it is before he needs to go out. That should give you a general rule of thumb of how much time he needs between drinking and actually having to go pee.
Putting pee on cue is also helpful for when you are in a hurry!
