As part of the kitchen remodel....I would add a garbage disposal if you don't already have one, I can't live without one but they're not that expensive. Also a nice tile backsplash is relatively inexpensive. I think no backsplash or having a formica countertop go up a few inches looks tacky and cheap. I've you're getting new cabinets, ones that go to the ceiling look really nice, that was a selling point for me in our kitchen.
