I think all of the above probably apply. It takes a long time for some dogs to adjust (at least 6 months in my experience) and he has had a lot of upheaval in a short time. I'd separate him for now and just let him have his own time and space - I'm assuming he is crate trained. He's old and his life has changed for ever - you did a great thing by taking him, but he might just be overwhelmed by it all.
